Summer Supper

Simple, fresh, and tasty. This is a meal I grew up with. Last Summer I was nursing a newborn that did NOT like it when I ate tomato products. So I missed out on the Summer treat of fresh garden tomatoes. Yum!! My Dad is an amazing gardener and he supplies us with fresh produce this time of year. We had this for supper the other night:
Toasted bread layered with fresh tomatoes, onions, and bits of bacon. THEN...comes the good part.Creamy cheese sauce poured over top, sprinkled with paprika...Yum!

Here's the recipe for the cheese sauce:
2 Tbsp. butter
2 Tbsp. flour
1 C. milk
1 C. Velveeta, grated

Melt butter in heavy saucepan. Blend in flour until smooth. Add milk slowly, stirring rapidly to prevent lumping. Bring mixture to a boil, stirring constantly. Reduce heat and cook 1 minute until it thickens. Add cheese. Remove from heat & stir well to blend. Enjoy!

Saturday

Somebody seems happy that it's the weekend! :)

Hope everyone has a fabulous Saturday! I've been battling a nasty cold/sinus crud for the past few days and had to miss my dear friend's going-away party today because I felt so yucky and didn't want to pass any germs along to anyone else! I've been feeling better as the day goes on though...so maybe I'll feel good enough to go to Joel's work picnic/baseball game tonight?? Time will tell!

We celebrated Joel's 30th last weekend!! His parents had us all over for lunch and bought him a cake for the fellowship last Sunday night, after church. His Birthday was Monday, so we had a family day at the zoo and went out for lunch. For supper, I made him stacked burrito pie (so good!) and we had cupcakes.
I love this man!

Just Random

So I should be working out right now. But I did a lot of cleaning today. And playing with kiddos. And errands. And I'm beat. So I'll work out tomorrow. :) Really!

We had our carpets professionally cleaned today...they look so nice! We've been talking about it since we moved in...Four. Years. Ago. I wish we'd have done it sooner. Chem-Dry did a great job!

Bible study was fantastic on Monday night. I've said before that I love the ladies that I study with, but I really do. They each have a heart for the Lord that is a blessing and a challenge to me. I've got a lot of growing in the Lord left to do but I SO enjoy the encouragement it brings to me to be in the Word and have it explained further. It is powerful! We just started studying the prodigal son and are doing John MacArthur's book: A Tale of Two Sons. It's going to be so good!

Mckenzie is making car & airplane sounds...She'll hold up the toy and "fly" it back and forth, making the sound and grinning big at her big brother. So much for a "girly-girl"...She rips bows from her head and likes to play with cars/planes. :) Funny girl!

Baby Love

I have a new nephew. :) He was *almost* a 4th-of July baby! P-man was very excited to hold his new cuz when we visited at the hospital. I'm so happy for my Sister and her family!!

Heat Wave!

Since the heat index is supposed to be 110 degrees today...We had to get our outside fun in early! We went to the park this morning and were home to hydrate and enjoy the A/C by 10am!! :)



I'm hoping to go for a run tonight...Hopefully the heat will die down by 8pm or so.

Answered Prayer

The ultrasound was NORMAL! :) We're so relieved, and praising God. Our pediatrician said there were no obstructions, etc. but that she did have some extra fluid in the front of her head. He said that it's ok though, because it is a normal variable: some kids have it and some don't. Because the ultrasound images were so clear and easy to read, there was no need for the MRI. (So the fact that she still has a bit of a soft spot on top of her head was a blessing=gave them a clear window into her her head where they could see her brain!)

Now I just have to take Mckenzie in every month for another head
measurement, until she's 15 months.
